Balsamic Tahini Glazed Roasted Vegetables

Ingredients

  • 2 medium Potatoes

  • 1 large Carrot

  • 1 Zucchini

  • 1 Yellow Squash

  • 1 small Onion

  • 8oz of Whole Mushrooms

  • 2 tbsp Balsamic Vinegar

  • 2 tbsp Tahini

  • 1 tbsp maple syrup

  • 1 tsp Rosemary

  • 1 tsp Garlic Powder

Directions

  • Preheat oven to 400F
  • Cut all vegetable to 1/2 inch thick pieces except mushrooms
  • Place on baking rack
  • Roast for 30 minutes
  • While your vegetables are cooking mix together Balsamic Vinegar, Tahini, Rosemary, and Garlic Powder
  • Pull vegetables out of the oven and add them to a large mixing bowl
  • Fold sauce onto your vegetables
  • Place back on baking tray and bake for 5-10 minutes
