Balsamic Tahini Glazed Roasted Vegetables

2 medium Potatoes
1 large Carrot
1 Zucchini
1 Yellow Squash
1 small Onion
8oz of Whole Mushrooms
2 tbsp Balsamic Vinegar
2 tbsp Tahini
1 tbsp maple syrup
1 tsp Rosemary
1 tsp Garlic Powder
Directions
- Preheat oven to 400F
- Cut all vegetable to 1/2 inch thick pieces except mushrooms
- Place on baking rack
- Roast for 30 minutes
- While your vegetables are cooking mix together Balsamic Vinegar, Tahini, Rosemary, and Garlic Powder
- Pull vegetables out of the oven and add them to a large mixing bowl
- Fold sauce onto your vegetables
- Place back on baking tray and bake for 5-10 minutes
