Plain Vegan Pancakes

1 ripe Banana
1 cup uncooked quick Oatmeal
1 cup Plant Based Milk (we prefer Unsweetened Plain Soymilk)
Optional: 1 tbsp vanilla extract
Topping Suggestions: Walnut, Apple, Cinnamon, Blueberries, Peanut Butter, Strawberries, Banana, and of course Maple Syrup
Directions
- Preheat pan on medium
- Peel banana
- Place all ingredients into blender
- Blend until smooth like pancake batter
- Using a 1/3 cup measuring cup scoop batter onto pan
- Cook on first side until center starts to bubble
- Flip pancake
- Cook of 2 minutes or until golden brown
Notes
- Blake’s preferred toppings: Whole apple cut into pieces, handful of walnuts, cinnamon, and syrup
- Sam’s preferred toppings: 1 cup of berries (any type or a mix), peanut butter, banana cut into pieces, and syrup
